The CIR emitter was preheated by an electric element located inside the emitter. The liquefied gas intake was regulated by a gas control valve. A handheld non-contact infrared thermometer (TM350+, Tecmen Electronics Co., Ltd, Hongkong) was used to measure the product temperature. A balance (BAS2202S, Sartorius, Germany) which is connected to the sample tray with two hanging metal wires was placed above the CIR emitter and was used to measure the product weight during blanching and dehydration. The temperature of emitter surface was maintained at 385 ± 12 °C during heating. The IR intensity measured at the product surface was maximum at the center and decreased towards the edge of the sample tray.
