Chemical composition of TRMHs as well as undigested muscle was
determined and presented in Table 1. The ash contents of the hydrolytes
are higher than that of themuscle; this is probably due to the addition of
NaOH during the hydrolysis reaction. Similarly, the mineral content is
proportional to the DH, so that TRMH-Alcalase has the highest mineral
content (17.74%), while TRMH-Neutrase has the lowest one (9.71%).
As shown in Table 1, TRMHs had high protein content (N70%) and
could be an essential source of proteins. Allmuscle hydrolysates had relatively
lowlipid content (0.10–1.19%). The lowlipid content in the protein
hydrolysates might significantly increase stability towards lipid
oxidation.
