Recently a man ordered an omelet and his wife
ordered scrambled eggs. The man returned the
omelet because he decided he wanted scrambled
eggs. We made them. Then he sent them back
because they did not meet his expectations. Of
course, we realize that our oeufs brouilles are
different from scrambled eggs, which don't contain
cream. Because we are Four Seasons we
cooked the eggs as he wanted them, like American
scrambled eggs, and didn't charge for them.
But cooking is about emotion—if you want to
please someone, you have to do it with your heart.
