The study involved centrifuging coconut milk emulsions to separate cream or oil droplets from the aqueous phase. Lower aqueous serums were collected and filtered. Interfacial proteins were removed by adding sodium dodecyl sulphate aqueous solutions and storing overnight. Protein concentrations were determined using Lowry's method, using bovine serum albumin as a standard. The reported protein amounts were calculated by dividing detected proteins by the initial emulsion sample weight.
