4.2.1. Effect organic acids on coliform population Effect of using surfactant in combination with organic acids and peroxyactic acid was not as effective as without surfactant (Fig. 4). Microbial population of coliform in inoculated beef trimming reduced (P < 0.05) to non-detectable level when treated with 30 g/L caprylic acid alone. However, antimicrobial treatment of beef trim with a combination of 30 g/L caprylic acid and 5 g/L EG resulted in 2.04 log10 CFU/g reduction of coliform populations. Among other organic acids, 30 g/L pyruvic acid alone or in combination with 5 g/L EG, reduced (P < 0.05) coliform populations by 1.37 and 1.31 -log10 CFU/g in respectively (Fig. 4).
