2.3. Audit's structure
To assess the risk of food safety data were collected using the external, third party audit. The objective of audits was to assess the level of implementation and functioning of the HACCP system. Audits were conducted by the same well trained and experienced auditor with a one-week interval using a single list of questions. Audit's questions were based on the criteria presented in the Codex Alimentarius (2003), Art. 5 of the Regulation (EC) No 852/2004, the European Commission's SANCO guidelines (Commission of the European Communities, 2005) and auditor's own experience in the HACCP system verification
