5.1.1. Data collection
Data collection was carried out through direct observation on
site and through dialog with the workers responsible for the
catering establishment. This collection aims to make the diagnosis
and determine any risks to people, as regards the conditions of
Occupational Health and Safety (OHS) and verify the applicability of
existing food safety rules, checking this way if the HACCP system
contributes to the prevention of occupational hazards in the
catering sector andvice versa
