Chocolate sponge cake:
Prepare grease cake pan with parchment paper on the bottom before start!!!!
1. Add all wet or liquid ingredients in mixing bowl.
2. Sift all dry ingredients into same mixing bowl with number 1, whisk with high speed for 7 minutes
3. while waiting the mix make soft peak meringue whisk egg whites with sugar and vanilla till get soft peak.
4. Fold in meringue and cake mix by hand. Arrange cake batter into cake pan 3/4 height of cake pan.
5. Bake 360'F about 15-30 minutes. It's depends on what's kind of oven do you have.
6. Once the cake cook and cool down keep in the fridge before slice into 3 layers.
Chocolate mousse:
1. Whipped whipping cream to soft peak and chill in the fridge.
2. Whisk eggs, yolks , dark rum and sugar together till full volume about 8 minutes with high speed.
3. Add melted chocolate mix till combined.
4. Fold in whipped cream and chocolate mix quickly before it start to seed up. Then keep in the fridge before use it for decorate the cake .
Chocolate shiny glaze:
1. Bloom gelatin in cold water and set aside.
2. Whisk sugar and cocoa powder first then add the rest of ingredients and bring to a boil.
3. Remove from heat and stir in gelatin.
4. Let it cook down at least 20-30 minutes before glazing the cake.
Assemble cake:
1. Slice cold cake into 3-4 layers.
2. Frosting or icing the cake with chocolate mousse till last layer. Smooth all mousse on the cake and keep the cake in freezer till solid hard.
3. Glaze the cake with slightly warm chocolate shiny glaze. Chill it the glaze is set.
4. Decoration on top of the cake with fresh berries or chocolate garnish pieces.
