The Jatoba fruit consists of pulp, one or more seeds, and peel. From the calculation of the yield of each component in relation to the whole fruit, most of it was the shell, with 56.63%. Therefore, the fraction used, pulp and seed, accounted for less than half of the fruit total mass with yields of 22.55 and 21.25%, respectively. Each fruit had, on average, 3.63 seeds.
