2.2.3. Bacterial count
The number of CFU per ml was evaluated at the beginning and
end of the inoculated wheat flour dough incubation. For this, an
aliquot of 1 ml of the medium was extracted from the flasks and
different dilutions were made in peptone water. 1 ml of each
dilution was grown in a sterile petri plate to which 15 ml of MRS
agar had been added. After cooling, the plates were incubated at
30 C in anaerobic conditions (BD GasPak Ez Container Systems,
Sparks, Maryland, USA).
