hydrolysis of cassava starch was monitored by viscosity
measurements of autoclaved starch (3 g in 30 mL distilled
water). The autoclaved starch (25 g) was weighed in a
Z3-DIN coaxial cylinder system. Viscosity was measured
at 30 C by applying a shear rate of 100 s1 using an UM
Physica Rheometer (Physica Messtechnik, Stuttgart,
Germany).
