Bitter gourd is a fruit/vegetable with high nutritional values: although eliciting a somewhat bitter flavor to our palate, it is “sweet” for our body (Fang and Ng, 2011a, Fang and Ng, 2012 and Fang and Ng, 2013). Investigations have focused on different parts of the bitter gourd plant and their potential uses in tumor therapy and treatment of diabetes. Bitter gourd seeds, which are abundant in oils containing dozens of small compounds, manifest medicinal activities.
