Tan and Corke (2002) classified three principal components of amylose content related, gelatinization temperature related and grain appearance related, contributing to the variability among flours from 63 rice varieties.
These authors however, did not take any waxy rice variety into their study; also, the crude lipid content of flours was also not determined.
