Fig. 4 shows the values of water uptake and water-solublematter loss for the reference and WG/GL/polysaccharide/water bio-plastic probes after being immersed for 2 and 24 h. Bioplastics were prepared at pH = 6, having 1.5 wt% of the different polysaccharides studied. The values of water uptake capacity are very similar in allcases, so that, all systems showed about 40 wt% water absorption after 2 h and this value increases up to 70 wt% after 24 h testing. On the other hand, the water-soluble matter loss (likely related to the plasticiser and some protein/polysaccharide molecules still solu-ble after processing) is approximately the same for all the samples,about 23 wt%. This concentration is close to the amount of glycerolinitially added to form the bioplastic and confirms its release during the immersion test in water.
