2.7. Anthocyanin
Anthocyanin was extracted using 1.0 g of the frozen peel tissue
power in 10 mL methanol:HCl (99:1, v/v) for 24 h at 20 C in the
dark. After centrifugation for 5 min at 13,000g, the upper aqueous
phase was subjected to spectrophotometric quantification at 530,
620 and 650 nm. Anthocyanin concentration was calculated with
the formula: 46,200 [(A530 – A620) – 0.1(A650 – A620)] and
the results were expressed as mg kg1 FW.
