3.2. Texture profile analysis
Table 1 shows values of hardness, cohesiveness and chewiness
for the different treatments. Other TPA parameters were also
determined, although not shown since they had no significant
differences (p < 0.05) between treatments. Immediately after
processing, hardness and chewiness of vacuum-packed samples (V
and V-P) were lower than the control (C). During storage, all
samples became softer as reflected by the lower values of
hardness, though control samples evidenced a higher rate of
decrease than the other treatments. After 21 days of storage,
pressurized samples showed higher values of hardness and
chewiness than the other treatments
