Effect of blanching on pectin composition of bamboo shoot slices Previous researches (Sila et al., 2006; De Roeck et al., 2008) demonstrated that the hardness decrease in fruits and vegetables during processing is mainly caused by the decomposition and nonenzymatic depolymerisation of pectin substance. Therefore, it plays an important role in understanding the change mechanism of their texture properties to study on the pectin composition change in bamboo shoots during blanching treatments. The effect of different blanching time on PP and (WSP) change in BSS can be seen in Fig. 3(a). Fresh Bamboo shoots had the highest PP content. However, PP content decreased gradually during blanching, reducing to 50.82% at 15 min. The PP content decrease may be caused by nonenzymatic depolymerisation during heat treatment. Nonenzymatic depolymerisation is generally caused by beta-elimination (thermal processing) and acid hydrolysis (pH 2–6) (Krall & McFeeters, 1998; Fraeye et al., 2007). Beta-elimination may be the main cause of PP content decrease in bamboo shoots during blanching. Furthermore, PP content decreased quickly during the first 9-min blanching, but it slowed down significantly, which was in accordance with the hardness decrease trend of BSS. This indicated that the hardness change in BSS had a significant correlation with the PP content change.
