Red pepper paste is a product obtained from milling and sifting fresh ripened red peppers ,which is then salted and fermented. Garlic , having a typical taste, is always present in the sausages although the amount added to the product varies depending on the product type and the production area. In addition to these, other spices such as black pepper, clove, cumin, bay leaf , and others are also used, depending on the region and type of product, and significantly among producers.
