3.2. X-ray diffraction
The X-ray diffraction pattern of rice cultivars at different stages
of puffing are shown in Fig. 1. The raw rice flour samples in all the
three rice cultivars exhibited the A-type diffraction pattern with
the major peaks at 2h values of 15.29, 17.89, 23.35. The peaks at
2h values of 15, 17 with a peak around 23 signified A-type of diffraction
pattern of rice starches (Kalita, Kaushik, & Mahanta,
2012)
