The present study emphasis potato pulp powder as a new
organic substrate for the production of acid protease. The
improved A. oryzae strain (F6) on SSF with potato pulp powder
and statistically optimized bioprocess variables namely
50% moisture, 30 ◦C, 120h fermentation time enabled 31 U/g
dry substrate acid protease production. The enzyme also
released 0.57 ± 0.25 U/g of glycine which is beneficial and offer
wide applications as well as improved prospects in the food
industry. The results demonstrate an economically viable acid
protease enzyme production process using a byproduct of the
potato processing industry
