Kaffir lime leaves will be purchased from the contacted garden in Surat thani province, Thailand. The leaves will be carefully cut apart of in between petiole and stem end; the defected leaves will be discarded. The defects free leaves will be collected for this experiments. The selected leaves will be washed thoroughly in the tap water and dip them in the solution containing 100 mg/L sodium hypochlorite for 10 min and then, they will be dried thoroughly of the moisture present on the leaves surface at ambient temperatures. After that, approximately 250 g of samples will be put in the transparent perforated (4holes/each side) polyethylene bags (30 cm × 20 cm). The bags were sealed with an electric impulse sealer. Samples put on a tray without packaging will be used as control. All the samples will be stored for one month under refrigerated temperatures. At every three days o intervals, the samples will be measured of the following quality determinations.
