Various extraction methods, including enzymatic extraction, wet reduction method, amino method and SFE were applied to test their effect on extracting and storage characters of fish oil from the muscle of sturgeon. The recovery of fish oil with SFE is high up to 97.25%, followed by enzymatic extraction. The fish oil extracted with SFE induced better colour attributes and oxidative stability during storage. It seems that SFE can improve ratio of PUFA, espe- cially for those with C above 20. Significant changes in the content of organic acids and aldehydes were observed in oils extracted by enzymatic extraction and wet reduction methods. The amino method increased the amine compound content in sturgeon oil. It seems SFE is a useful method to prevent lipid oxidation. None- theless, it has been observed that SFE may involve the co-extrac- tion of some endogenous volatile compounds, such as isomers of benzenes, so subsequently removal step would be required. As itis an easy way to reduce some oxidation products by fractionation of the extract after SFE.
As the high pressure equipment and freeze dried material with moisture below 20% were required for SFE extraction, the high cost at production scale is the main limitation for use of SFE. While in spite of involving higher inversion costs, SFE possess some advan- tages over other extraction methods, such as wet reduction, amino method or enzymatic extraction.
