The mineral concentration is shown in Table 4. Potassium was
the main macroelement in both untreated milk- and soy-smoothies
(2022 mg/l and 1800 mg/l). This is mainly derived from orange, due
to the high proportion of this fruit used in smoothies (50%);
although Souci, Frachman, and Kraut (2008) maintain that carrots
and cantaloupe are richer in this element (3280 and 3290 mg/kg
respectively) and could also contribute significantly. At the other
extreme, the lowest values were found for magnesium, which was
similar in both types of smoothies (milk-: 108, and soy-: 110 mg/l);
papaya was the ingredient with the highest proportion of this
mineral. Sodium data were very similar at 229 and 205 mg/l for
milk- and soy-smoothies respectively. Both kinds of smoothies
could be labelled as ‘‘very low sodium’’, as they contain less than
400 mg/l of sodium, according to the regulation governing nutrition
and health claims for foods (Regulation EC No 1924/2006).
There were no significant differences between calcium results (184
and 175 mg/l for milk- and soy-smoothies respectively). This fact
could be attributed to the calcium enrichment of the soy-milk used.
Zinc was the predominant microelement, with values of 1175
and 1113 mg/l in milk- and soy-smoothies; these results were
mainly due to the incorporation of carrot as an ingredient (Souci
et al., 2008). However, smoothies made from soymilk showed
higher iron content (1232 mg/l) than milk smoothies (931 mg/l)
according to the data reported by Souci et al. (2008) for soy and cow
milk. The same justification could be applied to the higher data
detected for manganese and copper in soy-smoothies.
