The worldwide trend will be the establishment of policies of authentication of human food, especially for international trade. Genetic authentication through DNA Barcoding is a robust and widely accepted method that can provide a means for ensuring the species and geographical origin of food samples (Lockley & Barsley,2000). This urges the need to develop authentication procedures for local and worldwide wildlife exploited as a food resource.European food policy has implemented authentication systems to improve the integrity of the consumers and food safety (European Commission, 2000). However, in other world regions, such as Latin America, food authentication is rare, while market mislabeling and substitution may be abundant.
