4. Conclusion
The effects of a combination of acid and heat-moisture treatment
on rice starch properties and formation of resistant starch
were observed in this study. Citric acid had the most impact on
depolymerization of starch, followed by lactic acid and acetic acid.
RS contents of the rice starches significantly increased under the
acid and heat-moisture treatments. Although the crystalline structure
of rice starch did not change, the reduction in swelling power
and viscosity and the increase in solubility of the acid and heatmoisture
treated starches were obviously observed. As a result,
the combination of acid and heat-moisture treatment is considered
as a good processing method to produce high amount of RS in rice
starch.
