Firmness was the height of the first peak. Adhesiveness was calculated by the negative area of the curve during retraction. Springiness was the ratio between the recovered height after the first compression and the original gel height. Cohesiveness was the ratio of the second compressed area and the first compressed area. Gumminess was determined by multiplying firmness and cohesiveness. Chewiness was determined by multiplying gumminess and springiness
