Peas (Pisum sativum L.) contain two kinds of monodesmosidic,
triterpene saponins, whose chemical structure is comparable to those
of soybean saponins. Primarily, saponin B (soyasaponin I) has been
reported to be the main component in green peas. Moreover, 2,3-
dihydro-2,5-dihydroxy-6-methyl-4H-pyran-4-one (DDMP) saponin
(soyasaponin βg) was also identified (Fig. 1)
