Cocoa trees are very special they don’t grow the fruit in the new branches but in the hold branches, the cocoa tree can be found in the amazon forest. Not every states can make a cocoa tree not the U.S, France, Italy and etc. most of our cocoa has to come from the amazon since we can’t grow it anywhere else. Here is a graph representing the consumption of cocoa as you can tell its shows the consumption of cocoa, it also depends of the temperature of the country, an example is France and Italy we like the chocolate because it’s hot and warm, there are three different varieties of cocoa, the best quality is called the criollobut its only 2% of the cocoa being produce, cocoa fruit looks like a shelland inside the shell is has a pod that holds the beans, that pod could hold up to 40 to 50 beans inside the fruit, The beans are in a gelatinous cover when they are extracted from the cocoa fruit, Fermentation is when they change the beans gelatinous form to the form that the cocoa beans usually are, The cocoa beans are stirred every day and constantly so the beans won’t stick together and so they could get there shape.
