To simulate the effect of heating on the batter structure, temperature sweeps were performed from 30 C to 100 C at a heating rate of 5 C/min and a strain amplitude of 0.1. Two replicates from different batches of each formula were measured. The viscoelastic
functions monitored were the elastic (G0) and viscous (G00) moduli and the batter complex viscosity (h*). Measurements were performed in duplicate.
