Lemongrass or citronella is a straw-like grass which has a distinctive, lemony flavour. The outer layer is discarded along with the straw-like top. Only the bottom one third is used. It can be sliced or chopped. it is used in soups and curry pastes and is also used to make drink or tea. If it is in big slices it is not eaten.
Lemongrass can be stored in the refrigerator for 2-3 weeks and it can also be frozen.
Dried sliced lemongrass should be soaked in water before using. One tablespoon of dried lomongrass powder is the equivalent of 2 stalks of fresh lemongrass.
