In consequence, the small depletion of vitamin C
retention, followed by the permanence of the antioxidant
capacity of HIPEF-treated products, could be due to the
stability of other antioxidant compounds, such as carotenoids
and phenols, or to their variation during HIPEF-processing
which results in the formation of new compounds
with higher antioxidant capacity. Nevertheless, further
investigations are still needed to explain this phenomenon.
