S. thermophilus and L. bulgaricus increased their
numbers by approximately 0.4 log CFU/g, whereas the value for
L. paracaseiLpc-37 increased by 0.8 log CFU/g during thefirst and
21 days of storage. Interestingly enough, the numbers ofL. paracasei
Lpc-37 were always higher than 8.0 log CFU/g, i.e., thefigure being
considered as the still active and useful probiotic culture, and
especially at day 21, the value was still high at 8.86 log CFU/g.
