s. RF exhibited
the highest pasting viscosities and pasting temperature (PT). Peak
viscosity (PV) and final viscosity (FV) significantly (P < 0.05)
decreased when the MS content increased from 0 to 5 g/100 g, but
the amplitude of decline reduced when the content continued to
increase to 8 g/100 g. On the contrary, through viscosity (TV) did
not decrease significantly until the MS content was up to 5%.
Breakdown (BD) and setback (SB) both decreased significantly
(P < 0.05) as addition levels of MS increased from 0 to 8 g/100 g. The
changing trend of PT corresponded to that of Tp in Table 2, which
also exhibited a slight drop in R95:M5 and R92:M8.
