Yeast starter culture
● Majority is in alcoholic fermentation, followed by SCP and
flavor enhancement
● Saccharomyces cerevisiae
● Yeast for alcoholic fermentation can be divided into 1. top
yeast and 2. bottom yeast
● Top yeast grow very rapid at 20oC [produce alcohol and CO2
]
● Bottom yeast grow best between 10 to 15oC
● Kluvermyces marxianus is used in alcoholic dairy product
such as kefir
