1. Introduction
There has been a great increase in the use of deep-fat frying processes in US and Europe. Frying is one of the oldest cooking methods widely used to prepare tasty and crispy foods; with fried potato products being one of its largest applications. Potato (Solanum tuberosum)is one of the world’s major agricultural crops and it is consumed daily by millions of people from diverse cultural backgrounds. The retail sales of potato chips in the US are about $6 billion/year representing almost the third part of the totalsales on this market (Garayo & Moreira, 2002)
