The objectives of the study was to improve cooling efficiency of cooling by using ice slurry in order to cool pig offal products temperature lower than 7 °c and to shorten cooling duration by 20 % of the present cooling time. The study was initiate by investigation of the present operation and problem analysis by using. Cause and effect diagram. Effect of water to ice ratios on cooling of different 13 parts of pig offal. It was found that water to ice ratio of 1:1 and 0.5:1 caused reduction of the cooling time of the products by 44.35 % and 48.02 %, respectively. However, these protocals yielded the products having temperature of 11.54 and 10.82 °c, respectively.
