The digestible carbohydrate content was calculated by difference.Instrumental color analysis was performed on LCM using a CR 410 colorimeter, with a 50 mm port
size, illuminant D65, SCI and a 10 standard observer angle. The
LCM color was evaluated by the tri-stimulus CIELab color space
method, determining the lightness (L*), redness (a*) and yellowness
(b*) values.
