Tissue Glutathione Levels
Ischemia-reperfusion produced a significant decrease in GSH and total glutathione in heart tissues. Sprouts feeding did not inhibit these decreases, although the total glutathione in hearts of the IR/Sprouts group was not significantly different from either IR/Control or from Sham (Table 1). In liver, the sprouts-fed group showed significant increases in GSH, GSSG, and total glutathione compared to the control animals.
Phase 2 Enzymes
In heart tissues, sprouts feeding did not prevent an ischemia-reperfusion-induced 28% decline in GCL activity, nor did it improve QR activity (Fig. 3). In liver however, sprouts feeding elevated the activities of GCL and QR by 40% (Fig. 4).
