After 3 days of storage, electrolytic leakage of samples stored at 0 ◦C had a higher value than artichokes stored at 12 ◦C, while samples stored at 5 ◦C had intermediate values, indicating a negative effect of the low temperatures on the loss of membrane integrity and permeability. All samples had an increase in electrolytic leakage after 7 days of storage, with no differences among treatments.
