All the samples maintained stable values of lightness (L*) throughout the conservation and although significant small differences were founded in some cases, they do not differ by more than 10% (data not shown).
The low values of redness (a*) are according to the low pigment (carotenoids and hemopigments) content characteristic of hake. The H and HF lots did not present modifications (p 0.05) of the tendency towards yellowness value (b*).
The application of the green tea film did not alter appreciably the colour in the fish despite the polyphenols
present in green tea. This colour was stable throughout the storage
(p 0.05) (data not shown).
