In terms of viability, the only notable differencewas determined in the microcapsules of gelatin and gum Arabic (9.06 and
8.17 log10 cfu/g). The other wall materials did not change the S. boulardii count. It is considered that the viability in gelatin based microcapsules may be related to reducing the heat transfer because of hydrophobic amino acids residues such as proline, hydroxyproline and alanine in the gelatin structure (Gilsenan & Ross-Murphy,
2000)
