Changes in headspace gas composition after treatment and during
chilled storage of control and treated poultry sausages are shown in
Fig. 2. The gas mixture utilized for modified atmosphere packaging
(MAP) contained 50% carbon dioxide and 50% nitrogen and was hence
oxygen-free. Consequently, the O2 concentration measured three days
after MAP in samples packaged under modified atmosphere, was very
low(below0.5%) but similar aswell,whether samples had been treated
by high pressure or not. This low concentration of O2 was maintained
throughout the storage for both control and treated samples
