results showed that increasing moltodextrin concentration and drying temperature resulted in a decreasing moisture content of the samples (p>0.001) as moltodextrin concentration increased from 10% to 20 % the moisture content of samples significantly reduced from 4.87% to 4.06% A similar trend was observed while increasing drying temperatures from 120 to 200 , resulting in a singnificant drop in moisture content from 5.29% to 3.88 %
