Herein, we report the first study of the use of lychee seed extract
in a meat product. The objectives of this work were to evaluate the
antioxidative effect of lychee seed extract on rawmeat paste, and to
study the in vitro cytotoxicity and anti-obese effect of the extract.
The sensory properties of the cooked meat paste supplemented
with different rates of lychee seed extract were also evaluated.
