The compositions of the different model systems are
given in Table 1. All systems contained 0.134 g of sorbate/100 g of system.
All ingredients used were of reagent grade and provided
by Merck (Quı´mica Argentina).
In all cases, the pH was adjusted to 3.00 by addition of
citric acid. It was determined with a pH meter Solution
Analyzer 5800-05 (Cole-Parmer, Chicago, IL, USA)
provided with a glass electrode.
The additive concentrations were selected taking into
account the maximum level admitted by the Argentine
Food Code for glucidic content modified foods.
