During such pressure homogenization process conditions (above 200 MPa), very strong forced induced phenomena of cavitation, high shear and turbulence are involved simultaneously, which may greatly affect the macromolecular conformation of the soy globulin. Moreover, rise in temperature is very important, around 22 °C/100 MPa, due to strong viscous stress of the fluid caused by the high velocity of the fluid flow, even if the role of heating on modifications is uncertain during the very short time in the homogenizing valve (few ms).
