Determining the effect of CCE on L. casei couldn demonstrate the interactions occurring between L. casei and the intracellular metabolites of S. thermophilus in the presence of
S. thermophilus phage.
Thus, cracked and un-cracked, CCE and CFS of S. thermophilus were added into RSM during L. casei fermentation,
and the acidification and propagation of L. casei were evaluated.
