Beverage samples were placed in capped sterile dilution
glass bottles and sterilized at 121°C for 15 min. Samples
from both beverages (99 ml) were inoculated (inoculum:
1 ml/109 CFU ml
1) to obtain an initial microbial population
of 107 CFU ml
1 (FDA, 2001) and stored at 25°C.
Samples from each group of beverages were taken during
the 14 days of storage and serial dilutions up to 10

were performed. Samples from each dilution were plated
on Petri dishes, using PDA and TSA media depending on
the inoculated micro-organism and incubated for 24 h at
25 and 35°C for S. cerevisiae and E. coli respectively. Measurements
