The greater relative decrease in B. cereus vegetative cells was observed
after 60 days (1.36 log10 cfu g1) and after 90 days (0.92
log10 cfu g1) of refrigerated storage. Since psychrotrophic strains
can growat temperature as low as 4e5 C, contaminationwas likely
due to mesophilic strains which minimum growth temperature is
15 C (ICMSF, 1996).
