From looking at their website, I assume that Colt is making only the Elite model. Like the 70 series 1911 and the SAA, it seems to be a custom shop gun. If you want a non-Elite marked model, the only recourse is the used gun (although there are plenty if NIB specimens) market. I have two blued pre-Elite Pythons, one a 1968 six inch that is the smoohtest, most accurate .357 I've ever fired, and a NIB 2 1/2 made in the 70's. My wife got me a 4 in. stainless Elite for Christmas that has a decent trigger and is also quite accurate. I don't care for the Hogue-type grips and have replaced them with pre-Elite factory wood. And in a moment of questionable brilliance, I decided I didn't care for the dull, heavily brushed stainless finish. Out came the Dremel, cloth polishing wheels, and the Flitz. Combined with countless hours of hand polishing, I now have a beautiful bright stainless Python. I don't mind that it'll show scratches (my xse stainless commander is my carry gun anyway) because the Flitz forgives all scratch transgressions. Maybe this gives you some idea of what to expect with Elite and pre-Elite Pythons-though I haven't seen the current model in blue.
